The BISTRO $$$$

We have five friends whose anniversaries are all in December. Every year we choose a restaurant where we celebrate our nuptials. This year, it’s The Bistro.

The Bistro is located at the Fantasy Springs Resort complex, off of Golf Center Drive, in Indio. It is an excellent place for an upscale celebratory dinner or pre-show meal in the resort. There’s a lovely ambiance, excellent personal service, and delicious food.

The Bistro specializes in contemporary cuisine, including fresh seafood and specialty sushi selections. And, of course, you can also enjoy premium USDA steaks, chicken, lamb chops, or their famous (so I’m told) pork chop. Bring your friends or that special someone for a gourmet meal including hand-crafted cocktails, fine wines, scrumptious appetizers, and spectacular desserts that are sure to impress.

Dine inside with a view of the open kitchen, a raging fireplace, a large bar in the center of the room. Dining is available outside on the terrace, overlooking palm trees and a beautiful courtyard. This year, we requested a private room, and the accommodations were exceptional.

I ordered an appetizer of crispy pork belly, which was excellent, to go along with an entree of Chilean sea bass, over a wild rice and mushroom side. Perfection. My spouse had lobster bisque, filled with chunks of lobster, and an entree of double cut lamb chops served with mashed potatoes and veggies. Again scrumptious.

Reservations are recommended. Dress code is resort casual.
